Based in Crowborough, Fresh Dough is a home-based microbakery producing handmade pastries and breads on demand.
Trained as a dancer and choreographer, I have swapped my ballet shoes for bannetons to spend time with my two young children - but I still love the odd jobs in the evening! Since July 2016, I have grown my love of bread-making from' Hobby to Business' selling to farm shops, catering suppliers, cafes, individual customers and farmer markets.
My favourite bread is a white seeded sourdough loaf . With its crunchy crust and elastic crumb it is rich in texture. My homemade ferment gives it a lovely flavour with a hint of sourness. And the five seeds blend keeps moisture in the bread a day longer!
I only use the essential ingredients to make my doughs. Meaning: no extra ingredients for the sake of it, no preservatives, no fuss. The good side is: you know exactly what you are eating. The bad side: the aesthetic isn't always at its best. For example, strengthen flours with additional gluten with keep the croissants in a lovely shape, all puffed up and airy. But compared to my croissants, they are flavourless.
